Martha Stewart's One Pot Pasta Meal


Like most people, who love to cook and bake, I have a serious addiction to cookbooks. I especially love cookbooks with full-color photos of each recipe.
 
I've done a fairly good job of controlling my impulsive buying of said cookbooks. But, once in a while, a clever placed internet ad will lure me to "click" and read what's in it.  That's how I discovered this cookbook. Sigh.

Martha Stewart's most recent cookbook, "One Pot: 120+ Easy Meals from Your Skillet, Slow Cooker, Stockpot, and More" became my most recent kindle download to my iPad (which saves a lot of bookshelf space for me).  I bookmarked a few recipes that I wanted to add to my cooking repertoire. Then, I promptly forgot about the cookbook. (Am I the only one who does that?)

Recently, I was doing my weekly shopping at Trader Joe's, and I spotted some fresh basil plants for less than $3.00. Seeing bright green basil and bright red cherry tomatoes, in January, lifted my spirits.  Then, I remembered the Martha Stewart pasta recipe that I had bookmarked.

Assembling this dinner took less than 10 minutes.  It's so simple-- linguine pasta, fresh cherry tomatoes, sliced garlic, red pepper flakes, salt, pepper, olive oil, and thinly sliced onion-- and water.

Bring the water to a boil, cook the pasta (stirring frequently with tongs) until the pasta is al dente and the water has almost evaporated-- about 9 minutes.

Season with salt and pepper garnish with torn basil.   Some extra freshly grated  Parmigiano-Reggiano cheese, and a drizzle of oil oil,  is the perfect finish.  

TASTING NOTES:  This recipe is a keeper, and I strongly urge you to make this!  After a hard day's work, this is one of the fastest and simplest dinners you will serve to your family.  I was pleased with how creamy the pasta sauce was, without any cream!  The red pepper flakes added a nice bit of heat, but it wasn't over the top. Tomatoes and basil are a classic pairing, and has all the flavors of summer.  Hopefully, you can find fresh basil and decent tomatoes during the winter, as I was fortunate enough to do.

 I won't forget about this cookbook so easily, this time.  There are several recipes I have bookmarked such as Shrimp with Tomatoes and Orzo, Spinach Pie, Stir-Fried Chicken with Bok Choy, Lamb Shanks and Potatoes...and more.

  2. This is a novel idea that I'd like to try. I'd have thought it would taste starchy, but if it's "creamy" then I'm all in.

  3. This seems too good to be true, Debby. But if you endorse a recipe I know it will be good. Every so often we have one of those days when I need to get dinner on the table quickly. I feel the same way about tomatoes and basil as you do...always a favorite.
