Sausage, Red Bell Pepper Penne Pasta

I have been too busy to even start decorating my house for Christmas-- let alone, set up the Christmas tree!  Where does the time go? Who took it?  I am so backed up with unpublished and unedited dinners, cakes, desserts and home baked breads-- that y'all must think my stove died. Nothing could be farther from the truth!

On Saturday, I made a chocolate cake with a white chocolate mousse filling (for a church auction)... which is a funny story because I don't consider myself a cake decorator and I had no idea how to make  a white chocolate mousse-- but it turned out great!

On Sunday, I made cream of broccoli soup,  raspberry coulis sauce (for the leftover mousse, to make parfaits), a turkey breast roast and a complete German dinner of a pork roast, potato dumplings and red cabbage!

I got a little carried away at Costco, about two weeks ago, so I've vowed to make recipes based on what's in my pantry and what's in my refrigerator.  Did I mention that we finally bought a brand new refrigerator? I didn't?  That happened in mid October, when Consumer Reports says is the best time to find a bargain on refrigerators. Do I hear an "Amen"?

Yes, it's a beauty, too. All 29 cu.ft. of French Door, freezer on the bottom wide open space-- with all kinds of bells and whistles.  I'm a very happy home cook, to say the least.

On the way home from work, I started doing a mental inventory on what to make for dinner. I usually have a meal plan for the whole week-- but not this time! I had some Italian sausage , half a red bell pepper, some fresh spinach and some cremini mushrooms.  So, I just started cooking, and didn't even dig out my camera, and started creating something that I had no idea would turn out so delicious.

Seasoned with garlic and my own blend of Italian seasoning, diced tomatoes, tomato sauce, tomato paste, some leftover red wine, and some heavy cream-- just a little.

Don't forget the Parmigiano-Reggiano (or whatever cheese you have)!

My wonderful husband walked into the door at 6:30, just as I finished creating a dish that turned out to be a pasta in 45 minutes.  Perfect timing! Craig smiled and gave this dish a double thumbs up. Yes, we had seconds.  I don't have my usual tutorial on how to make this, but I quickly jumped onto my laptop to write down how I did it.  This one's a keeper! It has sausage, vegetables and just the right about of spice to make a delicious dinner.

  5. You are way too busy! The cake is gorgeous for "an amateur!" Great job. Anxious for some of your other recipes and pictures, but take your time. January tends to be a slow time in blog world. Enjoy your private Christmas time. SO glad I found you in blogworld.

  8. I'll never give up on you! That cake is a thing of beauty. And I'm repenting right on for all the coveting I'm doing of your gorgeous new refrigerator. Some of my best meals are when I stand in front of the fridge and pull things out. I'm definitely putting this recipe on the menu.
    Also, can't wait to read your Potato dumpling recipe, I just made them on Friday and they didn't come out well. Sometimes they do and sometimes they don't, so I'm waiting to get some of your wisdom on the topic! Thanks Debby, you are the best.

  10. I love those pasta dishes that just happen, yours looks so tasty. Your caked turned out gorgeous. The new fridge awesome, but the best part is keeping the old one, I couldn't make it with just one refrigerator.

  12. It's a Samsung brand refrigerator. We paid-- are you ready-- $1036.00, with tax and free deliver, at zero interest! We love it. Oh, we bought it at Lowe's.

  14. I should start using all the ingredients I have in the fridge and pantry as well. I think they might last me for a couple of months...I wish I could buy a fridge like yours, it looks amazing!

  15. I love to experiment with pasta dishes. It is so rewarding when it comes out delicious and you have to write down the ingredients before you forget! Your pasta looks so good and congrats on the new fridge. Enjoy!

  18. Congrats on your new fridge! We have a second fridge in our garage as well that I use for cold drinks, yeast dough, and other frozen goodies. The cake looks like it turned out beautiful and I love the name refrigerator raid pasta, sounds like the perfect way to eat up what's in the fridge :D

  24. I know what you mean about time whizzing by this time of year, but that pasta would be delicious even if you had tons of time - not to mention that beautiful cake. The fridge looks great too - I need to figure out a way to break my old 20-year old jalopie and replace it.
